Hi Kitchen Heroes!
It's been a L-O-N-G winter...we know. We're just as anxious as you are for things to warm up. In anticipation of better weather we've included our first BBQ recipe of the season - Indian Inspired Lamb Chops. These are wonderful!
Ok - we're not going to beat around this bush with this spice....Moose of Mumbai Hot Indian Seasoning demands attention. Following requests for a spice blend with kick, this spice delivers. No worries, next month's feature spice is a mild Acadian Cajun-style seasoning.
This month's feature recipe for the Hot & Spicy Beef Vindaloo (a spicy curry) that came with your shipment can be served with less spice (try 1 tbsp to start), coconut milk to tame the fire, and a nice cooking cucumber raita as a side dish. The rice also works to tame the heat.
If you're looking for some new ideas, try these:
- Substitute Moose of Mumbai or Rusty Sled on Layne's Roasted Chickpeas.
- Stir Moose of Mumbai into yogurt cheese (see this month's CJ's Tool Kit for the recipe) along with a spoonful of chutney or honey for a quick dip to serve with pan-fried fish.
- Use Rusty Sled in place of paprika in your next recipe
- Add a spoonful of Flaming Toque to your next stew and taste what happens!
